If you’re not bringing buffalo chicken dip to the party… what are you even doing? This is THE dip, It deserves all the hype. Just 5 easy ingredients, toss it in the crockpot, and boom, cheesy, spicy, creamy magic. Perfect for game days, chill nights, or any time you’re feeding the squad.
Yield: Feeds 8 (or 1 very determined person)
Total Time: 3 hours 5 mins (5 min prep, 3 hrs cook)
You’ll Need:
- 4 cups canned chicken (2 big cans, drained)
- 16 oz cream cheese (2 blocks, cut into chunks)
- 1 cup buffalo sauce (we ride with Frank’s)
- 1 cup ranch dressing (or blue cheese if you’re that person)
- 1.5 cups shredded cheddar cheese
Toppings:
- Chopped onions, chives, or cilantro
- More shredded cheese on top
- Crumbled feta or blue cheese
Dip buddies:
- Tortilla chips
- Pretzels
- Celery + carrot sticks
- Crackers
- Spoons? No judgment
How To Make It:
- Cut up that cream cheese. Smaller chunks = melts faster.
- Add everything to your crockpot. Chicken, cream cheese, buffalo sauce, ranch, cheddar. Give it a quick stir.
- Cook on LOW for 3–4 hrs or HIGH for 1–2 hrs. Stir every 30 mins so it gets all melty and combined.
- Final stir + toppings. When it’s creamy and hot, stir it one last time, top it however you like, and switch the crockpot to WARM.
- Snack mode: activated. Serve with chips, veggies, or whatever’s within reach.
Tips & Fun Extras:
- Want it spicier? Toss in some chunky salsa or a pinch of ghost pepper.
- Bored of cheddar? Try Colby jack, pepper jack, or mix ‘em up.
- Using fresh chicken? Go for it, just make sure it’s fully cooked and shredded.
- Dip too runny? Chicken might’ve had extra moisture. Drain it well or thicken with a little cornstarch slurry.
Leftovers? Lucky you:
- Store in fridge 3–5 days.
- Freeze for up to 3 months (airtight container, always).
- Reheat in microwave or stovetop. Easy.
