Some days are so busy that the last thing you want is a complicated dinner. That’s when this Crockpot Chicken and Broccoli comes in handy. It takes just a few minutes to put everything into the slow cooker, and then you can get on with your day while dinner cooks.

If you have chicken in the refrigerator and broccoli that needs to be used, this recipe is an easy choice. There is very little prep, and everything goes straight into the slow cooker.

Tips

If you don’t have one can of each soup, you can use two cans of cream of mushroom soup or two cans of cream of chicken soup. The recipe will still be creamy and full of flavor.

Storing Leftovers & Freezing

Store leftovers in an airtight container in the refrigerator for up to 3 days.

To freeze, allow the chicken and broccoli to cool completely before placing it in a freezer-safe container or freezer bag. Freeze for up to 3 months.

When you’re ready to serve it again, thaw it overnight in the refrigerator or use the defrost setting on your microwave. The broccoli may become a little softer after freezing, but the meal still tastes just as good.

Serve with

Our favorite way to serve this meal is over wide egg noodles or cooked white rice. Both soak up the creamy cheese sauce, making every bite full of flavor. Either option turns this into a complete meal that the whole family can enjoy.
