What You Need
- 26 oz bag of frozen beef meatballs (go with homestyle or plain)
- 1 large yellow onion, thinly sliced
- 2 cans (10.5 oz each) condensed French onion soup
- 1 cup shredded Gruyère cheese (or provolone if that’s what you have)
How to Make It
- Dump in the meatballs
No need to thaw. Just pour them straight into your slow cooker. - Add onion and soup
Slice up the onion, toss it in, then pour in the soup. Give it a quick stir. - Cook it low and slow
Cover and cook on LOW for 3–4 hours or HIGH for 1–2 hours. Stir once or twice if you can. - Add the cheese
About 20 minutes before dinner, sprinkle the cheese on top. Cover it again and let it melt. - Serve it up
Great over mashed potatoes, toasted bread, or rice. Add a green veggie on the side if you’ve got one.
Quick Tips
- Skip Italian-style meatballs. The seasoning doesn’t mix well with the French onion flavor.
- Gruyère is classic, but if it’s hard to find or pricey, provolone or Swiss are totally fine.
- Pre-sliced frozen onions are a solid shortcut if you’re tight on time.
Make Ahead and Leftovers
- You can prep everything (except the cheese) the night before and refrigerate it. In the morning, just start the slow cooker.
- Leftovers keep in the fridge for 4–5 days.
- Freeze extras for up to 3 months. Thaw overnight in the fridge and reheat in the microwave or slow cooker.
Recipe Variations
- Want to use homemade meatballs? Go for it. Just sear or partially bake them so they stay together in the slow cooker.
- Add a splash of white wine or sherry for extra depth.
- Works with turkey or chicken meatballs if you prefer something lighter.
FAQ
Do I have to thaw the meatballs first?
Nope. Straight from the freezer is perfect.
Can I use different cheese?
Yes. Provolone, Swiss, or mozzarella work if Gruyère isn’t available.
