Why Everyone Loves It
There’s a reason this dish is called “Marry Me Chicken.” It’s comforting, creamy, and full of flavor, and it comes together with very little effort. Everything cooks right in the slow cooker, and the end result is tender chicken in a rich, cheesy sauce with sun-dried tomatoes and herbs.
If you’ve made Tuscan chicken before, this is a lot like that. Just easier. It’s the kind of meal that feels special but doesn’t ask too much from you, which is why it’s become a favorite in so many homes.
What You’ll Need
- 4 chicken breasts, skin on or skinless
- 2 teaspoons Italian seasoning
- Salt and pepper
- 1 tablespoon butter
- 1 teaspoon olive oil or oil from your sun-dried tomatoes
- ½ cup white wine plus ½ cup water, or 1 cup chicken broth
- 4 tablespoons sun-dried tomatoes, chopped
- 1 teaspoon paprika
- 1 teaspoon garlic granules
- 1 teaspoon chicken bouillon (only if you’re using wine)
- 1 cup full-fat sour cream or heavy cream
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional)
- 2 to 3 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley or basil
How to Make It
1. Season the chicken
Pat the chicken dry and sprinkle both sides with salt, pepper, and Italian seasoning.
2. Sear it
In a pan or in your slow cooker if it can sauté, melt the butter and oil. Add the chicken, skin-side down, and cook for a few minutes until it’s golden. Flip and cook briefly on the other side.
3. Add flavor
Pour in the wine and water, or chicken broth. Stir in the paprika, garlic, and bouillon if using. Add the sun-dried tomatoes.
4. Slow cook
Cover and cook on low for 1½ to 2 hours, until the chicken is fully cooked and reaches 165°F or 75°C. Try not to cook it too long so it stays juicy.
5. Thicken if needed
If the sauce feels thin, mix cornstarch with cold water and stir it in during the last 10 minutes of cooking. Let it heat through to thicken.
6. Stir in the creamy stuff
Push the chicken to one side. Stir in the cream or sour cream until smooth. Add the Parmesan and herbs. Mix gently and spoon the sauce over the chicken.
7. Serve and enjoy
Serve warm, straight from the slow cooker or transfer to a platter. It’s great over pasta, mashed potatoes, or rice.

A Few Tips
- Stick to full-fat sour cream or heavy cream so the sauce stays smooth and doesn’t curdle
- If you want a thicker sauce, stir in a bit of cornstarch near the end
- Try using the oil from the sun-dried tomatoes instead of plain olive oil for extra flavor
- Don’t cook this on high. Low heat keeps the chicken nice and tender
- Great with mashed potatoes, rice, or pasta, and a simple veggie like green beans or broccoli
