Everyone has a go-to dish at home. For us, it’s this Crockpot Turkey Sausage, Green Beans, and Potatoes. It’s easy to make, fills you up, and always tastes good. If you’re busy or just want something you don’t have to fuss with, this is it.

The first time I had this was when Michael made the stovetop version. We had just started dating, and I think he was trying to impress me. It worked. We’ve made it more times than I can count since getting married.

Later on, I started using the crockpot version. It’s just as easy and lets me throw everything in before work. That way, dinner’s ready when I get home, no waiting.

Ingredients

  • 2 pounds turkey rope sausage, cut into ½-inch slices
  • 7 potatoes, peeled and cubed
  • 4 cans (15 oz each) green beans, with liquid
  • 1 small onion, chopped
  • Salt and pepper, to taste
  • Crushed red pepper, to taste

Directions

  1. Put in potatoes
    Place the cubed potatoes in the bottom of your crockpot.
  2. Add onion
    Sprinkle chopped onion on top.
  3. Add sausage and beans
    Put the sausage slices and green beans (with the liquid) on top.
  4. Season it
    Add salt, pepper, and red pepper to your taste.
  5. Let it cook
    Cover and cook on low for 8 hours, until the potatoes are soft.

Tips and Serving Ideas

  • Use a 5 to 6-quart crockpot. If yours is smaller, cut the recipe in half.
  • Brown the sausage a little if you want more flavor.
  • Serve with bread, rolls, or a simple salad.
  • Want more kick? Add garlic powder or smoked paprika.
  • You can prep everything the night before and store it in the fridge.

Storage and leftovers?

Put them in an airtight container in the fridge. Eat within 4 days. Heat in the microwave or on the stove.
