If you’re anything like me, dinner time can sneak up on you fast, especially with kids running around, homework to check, and a million things on your mind. That’s why I love recipes like these Slow Cooker Steak Bites. They’re juicy, flavorful, and fall-apart tender without the hassle of cooking a full steak. Just dump everything in the crockpot and come back to a cozy dinner your whole family will ask for again and again.
These little bites are a hit with my kids because they’re easy to chew and packed with flavor. My husband, who thinks no meal is complete without meat, gives them two thumbs up. And me? I love that I can get dinner started in the morning and not worry about it all day. Plus, it makes its own delicious gravy that tastes amazing over mashed potatoes or noodles.
Yield: 8 servings
Total Time: 4 hours 15 minutes
Prep Time: 15 minutes
Cook Time: 4 hours
Ingredients
- 3 pounds sirloin steak, cut into 1-inch bite-sized pieces (round steak, stew meat, or chuck roast work too)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil (or any cooking oil you have)
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock or broth
- 1 ounce au jus gravy mix (1 packet)
- 4 tablespoons unsalted butter, thinly sliced
- Fresh chopped parsley, for garnish (optional)
What You’ll Need:
A 6-quart or larger slow cooker
How to Make It
- Put the steak pieces in a big bowl and season with salt and pepper. Mix well.
- Heat a skillet over medium-high heat and add 1 tablespoon of oil. Sear the steak in batches until browned on the outside. Don’t crowd the pan. Add more oil between batches if needed.
- Move the seared steak bites into the slow cooker. Add sliced onions and garlic. Give it a light stir.
- Pour the beef stock over the top. Sprinkle the au jus packet evenly. Add the sliced butter on top.
- Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours. Stir once in a while if you can.
- Serve warm over mashed potatoes, egg noodles, or veggies. Add parsley on top if you like.
Tips and Variations
- Don’t want to sear? You can skip it. Just put the seasoned steak in the slow cooker and keep going.
- Add mushrooms if your family likes them.
- Sprinkle in red pepper flakes if you want it a little spicy.
- Try different seasonings like Montreal steak seasoning.
- Add a splash of lemon juice or a spoonful of pesto at the end for extra flavor.
What to Serve With It
- Mashed potatoes
- Egg noodles
- Roasted carrots, green beans, or zucchini
- A side salad
- Warm rolls or bread to soak up the gravy
Leftovers and Reheating
- Store leftovers in the fridge in a sealed container for up to 3 days.
- Reheat in the microwave, on the stove, or in the slow cooker.
- Freeze in a freezer bag or container for up to 3 months.
Want Thicker Gravy? Mix 1 tablespoon cornstarch with 1 tablespoon cold water. Stir it in during the last 30 minutes.
