This cowboy casserole is just the kind of dish folks love on a chilly day. It’s made with plain ingredients most people have on hand: ground beef, potatoes, cheese, and a can of soup. You don’t have to fuss much with it either. Just layer everything in the slow cooker and let it do its work. By suppertime, you’ve got a warm, filling meal the whole family will eat without complaint.
Ingredients
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 2 garlic cloves, pressed or chopped fine
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 cup whole milk
- 4 cups peeled and sliced potatoes
- 2 cups shredded Cheddar cheese
- Salt and pepper, to taste
Directions
- Get everything ready:
Chop your onion, press the garlic, and peel and slice the potatoes. - Cook the beef and onion:
In a skillet, cook the ground beef with the onion over medium heat until the meat is browned and the onion is soft. Add the garlic and cook about a minute more. Season with salt and pepper. - Mix the soup and milk:
In a bowl, stir together the soup and milk until it’s smooth. - Layer in the slow cooker:
Line the slow cooker with a liner if you’re using one. Put a layer of sliced potatoes on the bottom, then a little salt and pepper. Add half the meat, then half the soup mix, then half the cheese. Do that all over again with the rest. - Let it cook:
Cover and cook on High for 3 to 4 hours, until the potatoes are soft and everything is hot and bubbly.
