What You’ll Need

- 1 (3 lb) chuck roast
- Salt and black pepper
- 1 yellow onion, peeled, halved, and thickly sliced
- 5 garlic cloves, minced
- 1 ¼ cups beef broth
- 2 tsp Worcestershire sauce
- 1 Tbsp fresh thyme, minced
- 1 Tbsp fresh rosemary, minced
- 2.5 lbs small Yukon gold potatoes, whole
- 5 medium carrots, peeled and cut into 1-inch chunks
- 2 ½ Tbsp cornstarch + 3 Tbsp beef broth (optional, for gravy)
- 2 Tbsp chopped parsley for garnish
How to Make It
- Brown the meat. Heat 1 Tbsp olive oil in a skillet over medium-high heat. Pat the roast dry with paper towels and season with salt and pepper. Sear both sides until well browned, about 4 to 5 minutes per side. Transfer to the slow cooker.
- Sauté the onion and garlic. In the same pan, add the rest of the olive oil. Cook the onion for about 2 minutes, then stir in the garlic and cook 30 seconds more. Spoon that over the roast in the slow cooker.
- Add the broth and herbs. Pour the broth, Worcestershire sauce, thyme, and rosemary into the pan and scrape up any browned bits. Let it cook for 15 seconds, then pour it all over the roast.
- Layer in the vegetables. Place whole potatoes and carrot pieces on top. Lightly season with salt and pepper.
- Slow cook it. Cover and cook on low for 8 to 9 hours. The meat will be fork-tender and the veggies perfectly soft.
- Shred and serve. Remove the roast and veggies. Shred the roast, removing any fat. Cut the potatoes if you like.
- Make the gravy (optional). Strain the broth into a saucepan. Whisk cornstarch with 3 Tbsp beef broth and stir it into the pan. Simmer until thickened, about 30 to 60 seconds. Pour over the roast and sprinkle with parsley.
