Got a crazy day ahead? This one’s a lifesaver. Throw everything in the crockpot in the morning and by the time you’re home, dinner’s done. These Swedish meatballs are rich, creamy, and full of flavor. You don’t need anything fancy. Frozen meatballs, a few pantry staples, and you’re set.
Prep Time: 10 minutes
Cook Time: 3 to 5 hours
Total Time: Around 3 hours
Serves: 8
What You’ll Need
- 3 cups beef broth
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 32 oz. frozen cooked meatballs (beef, chicken, or turkey, no pork)
- 1 can (10.5 oz) cream of mushroom soup
- 1 packet brown gravy mix
- 2 tablespoons Worcestershire sauce
- 1½ tablespoons dried parsley
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup sour cream or heavy cream (hold off and add this at the end; Greek yogurt works too)
- Fresh parsley for garnish if you’re feeling fancy
- Egg noodles, rice, or mashed potatoes for serving
How to Make It
Step 1 Mix cornstarch and cold water until smooth. Add it to the slow cooker with the beef broth and stir.
Step 2 Add the frozen meatballs straight from the bag. No need to thaw.
Step 3 Toss in the soup, gravy mix, Worcestershire, parsley, garlic powder, and onion powder. Stir it up. It’ll look lumpy. That’s fine. It smooths out as it cooks.
Step 4 Cover and cook on low for 5 hours or high for 3. Stir it once or twice near the end if you remember.
Step 5 Right before serving, stir in the sour cream or your creamy option of choice.
Step 6 Serve over noodles, mashed potatoes, or rice. Garnish if you want.
Tips
Don’t mix the noodles into the crockpot. Let everyone scoop their own. It stays cleaner and the sauce doesn’t get weird.
Leftovers make great lunches.
Feeding picky eaters? This recipe is easy to adapt. Skip what you need to.
Variations
Use golden mushroom soup for a deeper flavor.
Add shredded Swiss or Parmesan if you’re into cheese.
Toss in mushrooms if your crew’s cool with that.
Greek yogurt works if you want something lighter or are out of sour cream.
Storage and Reheat
Keeps in the fridge for about 4 days.
Freezes well for up to 3 months.
Microwave or heat it up on the stove. Whatever’s fastest.
