Okay, listen. If there’s one recipe that saves me every single time I need comfort food without turning my kitchen into a war zone, it’s this creamy Crockpot Velveeta mac and cheese. It’s cheesy, cozy, ridiculously easy and best of all.
No boiling pasta, no fancy roux. Just throw everything in the slow cooker, go do your thing, and come back to creamy, dreamy mac that tastes like a hug in a bowl. Bonus points if you serve it with soft dinner rolls (perfect for scooping) or some peas or broccoli to make it feel a little balanced.
Servings: 8
Cook Time: 2 hours
Total Time: 2 hours
Ingredients:
- 16 oz box elbow macaroni (uncooked—you don’t need to pre-boil!)
- 3 cups whole milk
- 1/2 cup butter, melted
- 5 oz can evaporated milk (trust me, don’t skip this)
- 16 oz block Velveeta cheese, cut into cubes
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground dry mustard (adds depth!)
- 1/4 teaspoon paprika (for just a tiny pop of flavor)
Let’s Make It:
- Spray your slow cooker with nonstick spray so the noodles don’t stick. No one wants sad, stuck cheese bits.
- Dump in the dry pasta, milk, butter, evaporated milk, Velveeta cubes, and all the seasonings. Give it a good stir so everything’s evenly coated.
- Pop the lid on and cook on LOW for 2 hours. Stir once or twice while it’s cooking—if you remember. (If not, it’s still going to turn out amazing.)
- After 2 hours, check the noodles. If they’re not quite tender yet, give it another 30 minutes.
- Stir it one more time, grab a spoon, and get in there. It’s cheesy, it’s creamy, it’s carb heaven.

Real Talk Tips:
- Evaporated milk = creamy without that heavy cream crash. It’s the hero of this recipe.
- This mac thickens as it cools, so if you’re reheating it later, splash in a little milk to bring the creaminess back.
- Want to be a legend at your next potluck? Double the recipe and keep it warm in the Crockpot. People will ask for the recipe. Promise.
Easy Swaps and Add-Ins:
- Not a Velveeta fan? (We can still be friends.) Use two 8 oz blocks or bags of shredded cheddar instead.
- Want to sneak in veggies? Toss in a bag of frozen broccoli—no one will complain.
- Gluten-free pasta works, too! Just note it might need a little more cooking time (closer to 2.5–3 hours).
