Want juicy, fall-apart chicken with barely any work? You’re in the right place. These BBQ chicken thighs are easy, saucy, and super flavorful. Just toss 5 simple ingredients in your slow cooker and let it do its thing. No grill, no stress, no problem.
Servings: 6
Total Time: 4 hours 5 minutes (or 2 hours 5 minutes if you’re in a hurry)
Ingredients
- 3 pounds boneless, skinless chicken thighs
- 2 teaspoons smoked paprika
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 2/3 cup BBQ sauce (plus more for glazing, use your fave brand, just make sure it’s halal or kosher if needed)
What You’ll Need
- A 6-quart slow cooker
- A baking sheet or pan for broiling
How To Make It
- Spray it down: Lightly spray your slow cooker with cooking spray.
- Add the chicken: Throw in the chicken thighs. Sprinkle with smoked paprika, garlic powder, and salt. Pour 1/3 cup of BBQ sauce on top and mix it around to coat everything.
- Cook: Cover and cook on high for 2–3 hours or low for 4–5 hours. You’ll know it’s ready when the chicken is super tender.
- Glaze it (optional but): Turn on your broiler. Move the chicken to a foil-lined pan and brush with more BBQ sauce (another 1/3 cup). Broil for 3–4 minutes until it gets that nice caramelized top. Keep an eye on it, it can burn fast!
Tips & Serving Ideas
- Want pulled chicken? Skip the broil step, shred the chicken with two forks, toss it back in the slow cooker with a little more BBQ sauce, and boom, BBQ pulled chicken.
- Don’t like thighs? Chicken breasts or drumsticks work too, just adjust the cook time.
- Meal prep win: Stores great in the fridge for 3–4 days or freeze it for up to 3 months.
- Serve it with: Buns and slaw, rice bowls, wraps, or just eat it straight out of the container (no judgment).
