If you’re anything like me, there are days when you just want dinner to make itself. That’s exactly why I love this slow cooker chicken thighs recipe. It’s so simple, but the chicken turns out juicy, full of flavor, and just melts right off the bone. Plus, it makes your kitchen smell amazing all afternoon!
I’ve made this on busy weekdays, lazy Sundays, and even for meal prepping lunch for the week. It never disappoints. You just season the chicken, give it a quick sear (for that crispy skin we all love), toss it in the crockpot, and let it do its thing.

What You’ll Need:
- 2 pounds bone-in, skin-on chicken thighs (about 4 to 5 pieces)
- 1 teaspoon garlic powder
- 1 teaspoon paprika (I usually use sweet, but smoked works too)
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1/3 cup chicken broth
- 1/4 cup butter, cut into small pieces
- 3 garlic cloves, minced
- A little fresh parsley for garnish (if you have it)
Let’s Make It:
- Season the Chicken
First, pat the chicken dry with paper towels. This helps the skin get nice and crispy. Mix all your spices—garlic powder, paprika, onion powder, salt, and Italian seasoning—in a small bowl. Rub it all over the chicken. Don’t be shy—really coat it. - Sear It for Extra Flavor
Heat up your olive oil in a big skillet over medium-high heat. Put the chicken in skin-side down and let it cook for about 4 or 5 minutes until the skin is golden and crispy. This step is worth it, I promise! - Into the Slow Cooker It Goes
Place the chicken in your crockpot, skin-side up. Pour the chicken broth around the sides, then sprinkle in the garlic and butter pieces. Put the lid on and set it to cook on LOW for about 4.5 to 5 hours. - Check and Serve
The chicken is ready when it reaches 165°F inside. It should be super tender. Taste and add a little salt if needed. Spoon the buttery garlic juices over the chicken, sprinkle with parsley if you’ve got it, and serve.
Extra Tips from My Kitchen:
- If you’re using boneless, skinless thighs: still coat and sear them, just sear the smooth side for 2 minutes instead. Then cook for about 3 to 4 hours on LOW.
- Want gravy? After the chicken’s done, pour the juices into a saucepan, whisk in 1 tablespoon of cornstarch, and cook over medium heat until it thickens. So good over rice or potatoes!
- Always check that the chicken hits 165°F in the thickest part, just to be safe.

Leftovers? No Problem.
Pop any extra chicken into a container and keep it in the fridge for up to 3 days. When you’re ready to eat, just microwave it or warm it up in the oven with a splash of water to keep it moist.
