This creamy Cajun chicken pasta is a family favorite. It’s made right in the slow cooker with simple ingredients, a little spice, and no extra pots to clean. Ingredients
- 2 pounds boneless, skinless chicken breasts
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 tablespoons butter
- 2 tablespoons Cajun seasoning (or use 1 tablespoon for less spice)
- ½ teaspoon garlic powder
- 1 pound penne pasta, uncooked
- 1 cup grated Parmesan cheese
Instructions
- Add to Crock Pot: Place the chicken, cream, broth, butter, Cajun seasoning, and garlic powder into a 6-quart slow cooker. Stir gently.
- Cook: Cover and cook on low for 4 to 6 hours, or high for 2 to 3 hours, until the chicken is fully cooked (165°F inside).
- Shred Chicken: Remove the chicken and shred it with two forks or cut into chunks.
- Mix Sauce and Add Pasta: Whisk the sauce to smooth it out. Return the chicken to the pot and add the uncooked pasta. Stir well.
- Cook Pasta: Cover and cook on high for 20 to 30 minutes, until the pasta is tender.
- Add Cheese: Stir in the Parmesan cheese. Cover for another 5 minutes so it melts into the sauce.
- Serve: Spoon into bowls and enjoy while warm. Add extra cheese or seasoning if you like.
Tips
- If you’re sensitive to spice, start with less Cajun seasoning and add more at the end.
- You can add bell peppers, broccoli, or even spinach before adding the pasta for extra veggies.
