This Crock Pot White Chicken Chili is one of the easiest, most satisfying meals you can make. It’s full of tender chicken, white beans, corn, green chilies, and classic spices. The beer gives it an extra layer of flavor, but you can leave it out if you prefer. It’s perfect for busy days when you want something hearty and healthy without spending a lot of time in the kitchen.

Ingredients
- 1 pound boneless skinless chicken breasts (or thighs, or use rotisserie chicken)
- 4 cups chicken broth
- 1 cup Dos Equis beer (or use more broth)
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz) Great Northern beans, drained and rinsed
- 1 can (4.5 oz) green chilies
- 1 cup canned corn, drained
- 2 teaspoons ground cumin
- 1½ teaspoons salt
- ¾ teaspoon black pepper
- ¾ teaspoon chili powder
- ½ teaspoon smoked paprika
- Lime wedges, for serving
- 1 avocado, diced, for topping
- Jalapeño slices, for topping (optional)
- Sour cream, for topping (optional)
- Fresh cilantro, chopped, for topping
Instructions
- Place chicken in the bottom of the slow cooker.
- Add broth, beer, onion, garlic, beans, green chilies, and corn.
- Stir in cumin, salt, pepper, chili powder, and paprika.
- Cover and cook on HIGH for 3.5 to 4 hours or on LOW for 5 to 6 hours.
- Remove the chicken and shred it with two forks.
- Blend about 1 cup of the soup until smooth and return it to the pot.
- Add the shredded chicken back in and stir.
- Taste and adjust seasonings if needed.
- Serve with lime wedges and your favorite toppings.

- Use thighs or leftover turkey if you don’t have chicken breasts.
