This slow cooker chicken noodle soup is everything you want on a cold day: warm, hearty, and incredibly easy to make. You just toss everything into your crockpot and let it do the work. It’s great for busy days, family dinners, or meal prep.

Ingredients

Add at the Beginning

  • 1 medium yellow onion, diced
  • 4 medium carrots, sliced
  • 4 celery stalks, sliced
  • 4 garlic cloves, minced
  • 8 cups low-sodium chicken stock or broth
  • 2 boneless, skinless chicken breasts (about 1.5 lbs) or chicken thighs
  • 2 dried bay leaves
  • 1 teaspoon dried thyme or 1 tablespoon fresh
  • 1 teaspoon dried rosemary or 1 tablespoon fresh, chopped
  • Salt and pepper to taste

Add at the End

  • 8 ounces egg noodles
  • ½ lemon, juiced
  • 3 tablespoons chopped fresh parsley

Instructions

1. Add to the slow cooker
Place everything except the noodles, lemon juice, and parsley into your slow cooker. Stir and season with salt and pepper.

2. Cook
Cover and cook on low for 6 to 8 hours. The chicken should be fully cooked and the vegetables tender.

3. Shred and add noodles
Remove the chicken, shred it with two forks, and return it to the pot. Stir in the egg noodles, making sure they’re covered in the broth. Cook for another 5 to 10 minutes on low until the noodles are tender.

4. Finish and serve
Stir in the lemon juice and parsley. Taste and adjust seasoning if needed. Serve hot.
