Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) Rotel or any diced tomatoes with green chilies
  • 1 can (15 oz) corn, do not drain
  • 1 block (8 oz) cream cheese
  • 2 limes, cut in half

Optional toppings we love:

  • Shredded cheddar or Mexican blend cheese
  • Sliced avocado
  • Sour cream
  • Salsa or pico
  • Chopped cilantro
  • Crushed tortilla chips for crunch

Directions:

  1. Get the slow cooker going. Place chicken breasts at the bottom of your crock pot. Sprinkle the ranch and taco seasonings over the top.
  2. Dump and go. Add in the drained black beans, the Rotel, and the can of corn with all the liquid. Do not stir, just pile it all in.
  3. Walk away. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is tender and cooked through.
  4. Shred it up. Use two forks or a hand mixer to shred the chicken right in the pot.
  5. Creamy magic time. Squeeze both limes over the mixture, then add the block of cream cheese. Give it a gentle stir.
  6. Let it melt. Cover again and let everything cook for another 30 to 60 minutes, until the cream cheese is fully melted and mixed in.
  7. Time to eat. Serve it over rice, in warm tortillas, on nachos, or however your family likes it.
