This here’s one of those no-fuss, fill-ya-up suppers I like to keep on hand for busy days. It tastes like you spent all day on it, but you didn’t. It’s got that good French onion soup flavor, only turned into a main dish with chicken and cheese. The slow cooker does all the work, and you can serve it over noodles or mashed potatoes to make it stretch and feed the whole bunch.

Now, I do love my slow cooker. Been a lifesaver since back in the day. Just throw it all in by lunchtime and by suppertime it’s ready and waiting. That’s my kind of cooking.

What You’ll Need

  • 2 lbs boneless, skinless chicken breasts
  • 1 big yellow onion, sliced thin
  • 1 can (10.5 oz) French onion soup (like Campbell’s)
  • 1 packet dry onion soup mix
  • 2 to 3 slices cheese (Swiss, provolone, Gruyère, or mozzarella)
  • Fried onions, optional
  • Fresh parsley, optional

Tools Needed

  • Slow cooker (8-quart is good)
  • Sharp knife for slicing onions
  • Spoon for serving

Note: if you are a beginner with no knife experience, go with the 8″ version for more comfort and control.

How to Make It

Grease the Crockpot
Spray the inside of your slow cooker or rub a little oil around with a paper towel

Put It All In
Lay the chicken in the bottom. Add the sliced onion, pour in the canned soup, and sprinkle the dry soup mix on top

Let It Cook
Put the lid on and cook on high for 3 to 4 hours or on low for about 6 hours. Don’t lift the lid too often

Add Cheese and Crispies
About 15 minutes before it’s done, lay a slice of cheese on each chicken breast. If you’ve got fried onions, sprinkle those on too. Put the lid back on and let the cheese melt

Time to Eat
Scoop out the chicken and spoon the sauce over the top. Sprinkle a little chopped parsley if you like. Serve with mashed potatoes, rice, or noodles

Tips from Grandma’s Kitchen

If you’ve got time, brown the onion and chicken in a skillet first. It gives it a nice deep flavor
Use whatever cheese you’ve got. Swiss is nice, but Gruyère or provolone works too
If you want it real saucy, shred the chicken before you serve it
Fried onions on top make it extra good, but they’re not needed if you don’t have any

Can I use thighs instead of breasts

Sure can. Just trim off the fat

What if my chicken is frozen

Best to thaw it in the icebox the night before. Frozen chicken in the crockpot cooks uneven

Do I need to stir it

No need. You can give it one stir halfway through if it makes you feel better
