This Crockpot Hamburger Potato Casserole is one of those easy, hearty meals everyone loves. It’s made with simple ingredients like ground beef, sliced potatoes, mushroom soup, and cheese-stuff most of us already have in the kitchen. It’s cozy, filling, and perfect for busy nights when you want something warm and comforting with little effort.

Yield: 10 servings
Total Time: 4 hours 15 minutes (including prep)
Cuisine: American
Course: Main Course

Ingredients

  • 5 small russet potatoes, peeled and sliced evenly
  • 2 lbs lean ground beef, browned and drained
  • 2 cans (10.5 oz each) cream of mushroom soup (or use cream of chicken if you prefer)
  • 1 cup whole milk (or whatever milk you like)
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded cheddar cheese (or any cheese you enjoy)
  • Non-stick cooking spray
  • Optional toppings: sour cream, sliced green onions

Instructions

  1. Cook the beef: In a large skillet, cook the ground beef over medium-high heat until browned. Drain the grease and set aside.
  2. Slice the potatoes: Peel and slice the potatoes thin and even. This helps them cook evenly. A mandoline makes it quicker if you have one.
  3. Make the soup mix: In a bowl, stir together the cream of mushroom soup, milk, salt, pepper, and garlic powder (if using).
  4. Layer it up: Spray your crockpot with non-stick spray. Layer sliced potatoes on the bottom, then some ground beef, a bit of the soup mix, and a sprinkle of cheese. Keep layering until you use everything. Finish with cheese on top.
  5. Cook: Cover and cook on high for 3 to 4 hours, or until the potatoes are soft.
  6. Let it sit: Turn off the crockpot and let it sit for about 10 minutes to thicken a little before serving.
  7. Serve: Cut into portions and serve with your favorite veggie. Top with sour cream and green onions if you like.
