This Slow Cooker Beef Sausage and Potatoes recipe is one of those meals that takes just a few minutes to prep and always hits the spot. You simply slice smoked beef sausage, toss it into the slow cooker with frozen diced potatoes, cheese, and a can of cream soup, then let it cook. A few hours later, dinner is ready and your kitchen smells amazing.

- 2 ounces frozen diced potatoes
- 2 rings (14 ounces each) smoked beef sausage, sliced and halved
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup whole milk
- 1 tablespoon dried chives
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper

- Fresh parsley for garnish (optional)

Directions
- Get your slow cooker ready
Spray the inside of a 6 to 8 quart slow cooker with nonstick spray or use a liner if you prefer - Add everything to the pot
Add the potatoes, beef sausage, both cheeses, cream of chicken soup, milk, chives, salt, pepper, and cayenne. Stir everything together - Let it cook
Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours. It’s done when the potatoes are tender and everything is hot and melted - Serve and enjoy
Stir before serving and sprinkle with fresh parsley if you’d like
