Ingredients
- 2 lbs large potatoes, peeled and cut into 1-inch cubes (about 4 potatoes)
- 2 cups chicken broth
- 8 oz beef/lamb bacon, cooked and chopped
- 1/2 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp salt (or to taste)
- ¼ tsp ground black pepper
- 4 Tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1 cup shredded cheddar cheese (mild or sharp)
- 3/4 cup sour cream
- Green onions, chopped (for topping)
Tip: For the best melty cheese, shred it fresh from a block instead of using pre-shredded cheese.
How to Make It
- Load the Crockpot
Add the potatoes, chicken broth, beef/lamb bacon (save some for topping), onion, garlic, salt, and pepper. Stir everything together. - Cook
Cover and cook on high for 3 to 4 hours or on low for 5 to 6 hours. The potatoes should be soft enough to mash with a fork. - Mash and Thicken
Lightly mash some of the potatoes right in the pot for a thicker texture. For a smoother soup, use an immersion blender. - Add the Creamy Goodness
Stir in the butter, flour, milk, cheese, and sour cream. Let it cook on low for 30 to 60 more minutes until it’s thick and creamy. - Top and Serve
Spoon into bowls and add toppings like green onions, extra beef/lamb bacon, or more cheese. Serve hot and enjoy!

FAQs
Can I skip sour cream?
Yes, but it adds a nice tang. Try a little lemon juice or Greek yogurt instead.
Which potatoes are best?
Russet or Yukon Gold work great.
Why isn’t my soup thick?
It may need more time to cook or more potatoes mashed in.
Can I freeze it?
It’s not ideal. The texture changes once frozen and thawed.
