Why This Recipe Works

  • Set it and forget it. Just 15 minutes of prep, then the crockpot does the rest.
  • One pot. Less cleanup, more time to relax.
  • Kid-friendly and cozy. It’s creamy, cheesy, and full of familiar flavors.
  • Healthy and filling. Whole grains, lean protein, and vegetables in every bite.
  • Easy to adapt. You can make this recipe work with whatever you’ve got.

What You’ll Need

Base ingredients:

  • 1 cup brown rice, rinsed
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 2 1/2 cups low-sodium chicken stock
  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets, cut into bite-sized pieces

To season the chicken:

  • 1 teaspoon onion powder
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt

To finish it off:

  • 1/2 cup full-fat sour cream
  • 1 cup shredded sharp cheddar cheese
  • Fresh chopped parsley, optional for garnish

How to Make It

  1. Layer the base
Add the rinsed rice, onion, garlic, and thyme to your slow cooker. Pour in the chicken stock and give it a little stir.
  2. Season and add the chicken
Rub the chicken breasts with onion powder, salt, and Dijon mustard. Lay them right on top of the rice mixture.
  3. Let it cook
Cover and cook on high for 2 hours or low for 5 to 6 hours. The chicken should be fully cooked, and the rice almost done.
  4. Prep the broccoli and chop the chicken
Take the chicken out and chop it into bite-sized pieces. Steam the broccoli until just tender. A couple of minutes in the microwave works great. Drain well.
  5. Mix everything together
Add the chopped chicken and broccoli back into the slow cooker. Stir in the sour cream. If the rice feels a little firm or dry, add up to 1 more cup of stock a little at a time until it’s just right.
  6. Add cheese and finish cooking
Sprinkle the cheese over the top. Cover again and cook on high for 30 more minutes until everything is hot and the cheese is melted.
  7. Serve and enjoy
Let it sit for about 10 minutes before serving. This helps it thicken up. Add some parsley on top if you’d like.

Ingredient Swaps and Tips

Brown rice is best for texture and nutrition. If you use white rice, add it during the last 2 hours of cooking so it doesn’t overcook.

Chicken thighs or turkey breast are great options too. Thighs stay extra tender.
Frozen broccoli works. Add it about 30 to 45 minutes before the end so it doesn’t get too soft.

No sour cream? Plain Greek yogurt (strained) works well and adds extra protein.

No Dijon mustard? Try yellow mustard or even a splash of vinegar for some tang.

Cheddar cheese is great, but Monterey Jack or Colby are good too. Reduced-fat cheese is also fine.

What to Serve With It

  • This dish is a full meal by itself, but if you want to round it out:
  • A green salad with lemon vinaigrette
  • Some crusty bread or dinner rolls
  • Roasted carrots or Brussels sprouts
  • Lemon wedges to squeeze over the top

Storing Leftovers

Fridge: Keeps well for up to 4 days in a sealed container. The rice will soak up more flavor and get creamier.

Freezer: Let it cool completely, then freeze in portions for up to 3 months.

To reheat: Warm it in the microwave with a splash of broth or milk, or heat gently on the stovetop.
