There are few suppers as soothing to the soul as chicken and dumplings. This humble repast has graced many a farmhouse table, and now, with the aid of modern convenience, may be prepared with ease in a crock pot. One need not toil over a hot stove for hours, for this dish simmers slowly throughout the day, leaving you with tender chicken, savory gravy, and dumplings soft as down.
This particular rendering makes use of modest shortcuts, chiefly, store-bought biscuit dough and condensed soups, which lend themselves most agreeably to the cause. What results is a meal deeply comforting, with the flavor and substance of a dish made entirely from scratch.
Ingredients
- One large onion, finely diced
- One tin (10.5 oz) condensed cream of celery soup
- One tin (10.5 oz) condensed cream of chicken soup
- One tablespoon fresh parsley, chopped
- One teaspoon poultry seasoning
- Black pepper, to your liking
- Four boneless, skinless chicken breasts
- Two cups chicken broth, reduced sodium
- Two cups frozen peas and carrots, thawed
- One tin (16.3 oz) refrigerated biscuit dough, Buttermilk, Country, or Homestyle
Method
- Prepare the crock
Into the bottom of a six-quart slow cooker place the chopped onion. Lay the chicken breasts atop. - Mix the sauce
In a separate bowl, combine the soups, parsley, poultry seasoning, and pepper. Stir well and spread the mixture over the chicken. - Add broth and cook
Pour the broth gently into the crock. Cover and cook on high for five hours. - Add dumplings and vegetables
At the fourth hour, roll out the biscuit dough thinly and slice each into four strips. Stir the thawed vegetables into the pot. Lay the biscuit strips atop the mixture and close the lid swiftly. - Finish and serve
When the dumplings have cooked through, about one hour, remove the chicken, shred it gently with two forks, and return it to the pot. Stir all together and allow to warm for ten minutes more before serving.

Tips for a Fine Result
- Be sure your vegetables are thawed prior to cooking, that they may warm through in good time.
- Roll thy biscuit dough thin, lest they puff too high and become doughy within.
- Resist the urge to lift the lid, for each opening allows heat to escape and delays the cooking of your dumplings.
- Chicken thighs may be used in place of breasts, should you desire a richer flavor.
